Title Effects of Ethephon and Ethylene Periodically Pre-treatment on Sprouting Inhibition and Chip Color of Potato during Storage

Abstract This study was done to evaluate the effect of ethylene and ethephon treatment on inhibition of sprouting and on
chips quality of potatoes during long-term post-harvest storage period. The sprouting rate in the control group was
100% on both ¡®Du baek¡¯ and ¡®Atlantic¡¯ varieties after 4 months. On the other hand, in case of ethephon treatment
at 10 days interval, there was no sprouting in 'Du Baek' and there was 7.8 % in 'Atlantic'. In case of ethephon
treatment at 20 days interval, sprouting rate was 5.6% and 28.9% in 'Du Baek' and ¡®Atlantic¡¯ varieties respectively.
Ethylene treatment at 10 days interval resulted in sprouting of 72.2% in 'Du Baek¡¯ and 25.6% in 'Atlantic'. Weight
loss was higher in the control group than treatment groups. Ethylene and ethephon treatment has negligible effect on
the content of starch. Reducing sugars content was increased as the storage period proceeded. There was no
significant difference on chips color between control and treatment groups.
